The best meals are the ones you don’t have to choose. Everything at Aizle is made in-house, from the nutritious live ferment in the sourdough, to the hand churned butter, to the aquavit and aged kombucha in our cocktails.

Opened in 2014 by chef and owner, Stuart Ralston, Aizle is the first of four restaurants that Chef Ralston has opened in his home city of Edinburgh. Aizle displays the best of Scotlands natural larder, and by working with a close team of local suppliers we are able to deliver the best of seasonal Scottish produce

Alongside Chef Ralston, Aizle is currently ran by a talented team of chefs and front of house team including; Jade Johnston, Operations Manager; Elle Mackay, General Manager; and Alberto Rico Sanchez, Head Chef. Our team bring a wide range of skill and experience into Aizle and have helped create what we deliver to you today.

After an incredible decade, the decision has been made to close Aizle on the 21st of September 2025. It has been a wonderful 11 years of working with suppliers, staff and serving so many wonderful customers. The decision allows us to move onto new projects and continue to grow. We thank you for all the memories and look forward to these final moments celebrating Aizle’s success. All remaining vouchers will be redeemable across our other venues, Noto, Tipo and Lyla.
